Ingredients
- 3 x 100g packs Loka Sea Salt Protein Chips
- 150g grated cheddar
- 2 teaspoons olive oil
- 400g beef mince
- 3 teaspoons garlic powder
- 3 teaspoons onion powder
- 3 teaspoons smoked paprika
- 1 teaspoon ground cumin
- 2 teaspoons chilli powder
- 3 tablespoons tomato paste
Toppings
- Sour cream or natural yogurt
- Guacamole
- Diced tomatoes or salsa
- Fresh coriander
- Jalapeños
Method Heat olive oil in a large fry pan and cook beef mince until browned. Add spices and stir until fragrant, then stir through tomato paste, salt and pepper to taste, and add a cup of water. Bring to a simmer and cook for 15 minutes or until water has reduced.
Spread protein chips over an oven-proof dish or tray. Sprinkle over half the cheddar, then top with mince, then remaining cheddar. Grill until cheese melts and everything starts to brown at the edges.
Serve with sour cream, guacamole, salsa or your favourite Mexican toppings!
