If you're looking for a gluten-free midweek meal, you can't go past a big bowl of green pea & bacon pasta. Serves 2.
Ingredients
200g LOKA Protein Pasta
2 tbsp olive oil
4 rashers rindless bacon (chopped)
140g frozen peas
2 cloves Garlic (minced)
1 small onion (diced)
Pecorino (to taste)
Recipe
Cook pasta as per packet instructions.
Fry off bacon pieces, garlic and onion in a pan.
Blanch your peas, careful not to overcook (1-1.5mins in simmering water).
Mix all elements together and dust with fresh pecorino.
